The flavour is distinct—musky, juniper-like, and slightly sweet—and is often used to offset the tartness of acidic fruits like rhubarb and gooseberries, reducing the need for sugar. Traditionally, the young stems are candied to create the bright green decorations found on cakes, while the seeds and roots serve as essential botanicals in the production of gin and herbal liqueurs like Chartreuse.

This plant is typically grown as a towering biennial that produces massive, spherical flower heads in its second or third year before dying back after setting seed. It is fully hardy but requires significant space to accommodate its impressive height, which can reach up to two metres. For the best results and lush growth, plant it in a location with partial shade, mimicking a woodland edge. It is not drought-tolerant and thrives in deep, fertile, moisture-retentive soil that is kept consistently moist through regular watering.
